There are many species of edible insects in the world. In Kenya, the most popular edible insect is the termite. Termites are eaten by communities found in the Western region of the country. These are normally eaten when they get to the winged stage.
The method used to harvest the termites depends on the community in that area. In Kakamega, when the winged termites are sighted, something that looks like a tent is built over the anthill from which they are emerging. This structure needs to be dark and many times, blankets or sacks are used. All exits are blocked and the only exit left is the one in the tent-like structure. Termites are attracted to light and will make for that exit. They fall into a container and are transferred periodically into one that is covered so that they don't get away. Some people add smoke under the tent structure to encourage the termites to come out. A drum or tin can also be beaten. This is said to sound like rain and because the termites emerge when it begins to rain, they all come trooping out.
They are fried without oil and with a little salt. They are then stored carefully to be eaten over time. They can be eaten dry or as a stew; some people remove the wings while others don't. Termites are a good and cheap alternative source of protein, some vitamins and minerals. They can be found in some markets in large towns. Many people are repulsed by the thought of eating insects but those who eat them will not pass up a chance of having their favourite snack!
