Spiced Mukimo
Spice Mukimo

Mukimo is a balanced one-pot dish from central Kenya and derives its name from the word `kima’ i.e. mash. It has a wide range of variations.

Ingredients

4 cups githeri (2cups boiled green maize, 2cups boiled beans or green peas).
1.5kg Irish potatoes (peeled).
1 bunch of pumpkin (kahurura) leaves.
1 tbsp crushed ginger.
1 bunch spring onions, chopped
1 tsp mixed spices.
Salt to taste.
2 cups water for boiling.



Method:

  • Add the water to the potatoes and boil. Add the githeri and pumpkin leaves, and continue boiling till the potatoes are soft. Drain the liquid, add salt and mash the mixture.
  • Heat the oil; add onions, ginger and mixed spices. Fry for a minute.
  • Add the mashed mixture and mix well with the fried onion and herbs. Cover the pot and let it cook on low heat for five minutes.

Serve hot with stew or sauce.

Food 4 Thought: To save time, keep a few tins of pre-cooked githeri at home. And you can now also buy traditional githeri from the cold sections in the larger supermarkets!
Tip

Stop binging and then regretting what you ate! Starving yourself or not eating properly during the day will only make you hungry by nightfall, so make sure to make every meal a well-balanced one. The best way to keep your appetite from getting out of control is to add good sources of protein into your meals.
