POUNDED CASSAVA

Ingredients

1 kg cassava
Vegetable oil for frying
3 onions, finely chopped
2 red chillies, finely chopped
4 tomatoes, finely chopped
1 tbsp tomato puree
salt to taste




Method:

Peel and boil the cassava until it is cooked. Pound it into a mash and set aside. In a heavy based large saucepan, heat the oil and fry the onions with the chillies until the onions are light brown. Stir in the tomatoes and cook for 2 minutes. Add the tomato puree and salt, and simmer on low heat for 5 minutes, stirring to prevent burning. A little water may be added. Add into the pot the pounded cassava and stir well to blend so that the mixture looks pink. Serve on a bed of lettuce garnished with fancy cut tomatoes.
Serve 4.

BEEF MEATBALLS

Ingredients

1 kg beef minced meat
1/2 loaf wholemeal bread
salt to taste
3 tbsp soy sauce
1 cup dhania, chopped
2 eggs
1 tsp curry powder
1 tbsp garam masala
1 tbsp garlic, crushed

Method:

Slice away the crusts around the bread and crumble it into small pieces. Then mix together all the ingredients until they are well combined. Form medium sized balls and place on an oven tray. Pour a little water onto the tray to keep the balls moist, and bake in the oven at 200 degrees centigrade for ½ an hour.
To make a sauce, use the liquid and fat remaining on the oven tray. Add into the cooking juices some soy sauce, tomato puree and a little corn flour paste to thicken on a low fire.
Makes 30 balls.

Susan says: Deep fried foods are not recommended for a diabetic so baking the balls is a wonderful option. You can steam them too but you’ll loose the browning effect.
KNIVES TIPS

Knives need to be used properly and maintained for them to work as they should. Here are a few pointers on caring for your knives:

Sometimes your knife may be very dirty and giving it a good soak in warm soapy water could be what you think it needs. Before you do that, remember that if the handle is wooden, soaking may cause the wood to swell.
The wooden handle of a knife may after a while begin to look dull. Rub in some cooking oil periodically to help maintain the shine.
Always ensure that you use a soft board that will preserve your knife. Wooden and plastic boards are good. Metal or ceramic surfaces will dull your blade and could even chip it.
